AFRICAN STEWS, RICE MENU

All our dishes are made from scratch with fresh vegetables and fruits from the local markets. We use fresh cuts of meat and sea food, except where the recipe dictates otherwise, such as: when we may use smoked fish, crayfish or venison. Other ingredients such as flours are procured dry. Be assured that our dishes contain all natural ingredients: no artificial laboratory-generated flavors of meat, chicken, fish or crayfish; no MSG, coloring chemicals or preservatives. Indeed we make our own cooking stock fresh out of soup bones, stewing chicken, fish heads and/or vegetables. Our company

African Miliki Foods Ltd. based in Las Vegas Nevada manufactures all the seasonings that we use in our African cuisine. This Stews, Rice menu features Chicken Banana Casserole, Red Stew, Jollof Rice, Gumbo, Luwombo, Peanut Stew, Suya (Chichinga), Yoruba Stew, Black-eyed Pea Stew, Chili Con Carne. It offers a choice variation of the meats and sea food used in the dishes. The Peanut Stew and Bean dishes have a Vegetarian and Vegan version. Foods on this menu are sold per plate. We deliver food orders in 25 servings carry-out pan. or 48 Qt Cooler (100 - 150 servings). All food measurements indicated here are at the closest more or less approximate.

Gumbo Gumbo
Fryer/broiler chicken thighs and breasts (12 oz) seared and sautéed in vegetable oil, onion, garlic and oma's Jollof Rice Seasoning; then deboned, cubed and submerged in a medley of simmering tomatoes, hot peppers, celery, shrimps and chicken stock thickened with roux, until done. Skewered beef flap meat (5 oz) coated with oma's Suya Coating (Yaji seasoned peanut grit) and slow grilled near burning wood and charcoal. Served with white, brown or wild rice, and tomato- red onion salad. *Additional skewered beef add $3.00.

Liquefied onions, super ripe tomatoes and peppers including atarodo (habanera) simmered to puree thickness before adding boiled chicken (12 oz), vegetable oil and a dash of oma's Red Stew Seasoning is added, then stewed to perfection. Black-eyed peas boiled, drained and then simmered in a watery stew of chopped tomatoes, red peppers, onions, 3 oz smoked dry cat fish or salmon bits and a little vegetable oil aromatized with oma's peppersoup seasoning and African oregano.
